Marbré au chocolat | Marble cake


Ainda mal consigo acreditar que já passou tanto tempo desde o último post aqui publicado! Mas a vontade de fazer coisas doces perdura. Olá de novo!

I can hardly believe in how much time has passed since I published the last post! But the desire of making sweet things still endures. Hello again!


  • 250 gr. manteiga amolecida (butter, softened)
  • 260 gr. açúcar em pó (icing sugar)
  • 6 ovos (eggs)
  • 5 cl rum ou outra bebida (rum or other drink)
  • 300 gr. farinha (flour)
  • 2 clhr. café de fermento em pó (coffee spoon baking powder)
  • 25 gr. cacau em pó (cocoa powder)
  • 4 cl leite (milk)
Pré-aqueça o forno a 180ºC. Barre e enfarinhe uma forma de 28 x 10 cm (tipo bolo inglês).

Numa taça, misture a manteiga amolecida com o açúcar em pó até obter uma consistência bem cremosa. Junte os ovos, um a um, mexendo bem entre eles. A seguir acrescente o rum ou, como no meu caso, tequilla (pode usar qualquer bebida deste tipo), a farinha e o fermento, peneirados.

Divida a mistura em duas partes iguais. Misture o cacau com o leite e incorpore-o, progressivamente, numa das misturas. De seguida, encha a forma alternadamente com a mistura "natural" e a de chocolate. Leve ao forno por cerca de 50 min e já está!

Preheat the oven at 180ºC. Grease and flour a 28 x 10 cm tin.

In a bowl, combine the softened butter with the icing sugar until it gets very creamy. Add in the eggs, one by one, mixing well in between. Next, add the rum or, like me, tequilla (or any drink like this), the flour and baking powder, sifted.

Divide the mixture in two equal parts. Mix the cocoa powder with the milk and add it, gradually, in one of the parts. Next, fill the tin, alternatively, with the natural mixture and the chocolate one. Put it in the oven for about 50 min. and that's it!

My Easter treat: Brownies


Sempre que fico muito tempo sem fazer alguma coisa, é inevitável duvidar da minha capacidade de voltar a fazê-la, e bem. Admito, sou um bocadinho de nada neurótica. Assim, decidi que nada seria melhor do que aproveitar a época pascoal para voltar à cozinha e fazer algo tão simples quanto delicioso. Brownies, pois então. Seria apenas uma questão de escrever a receita e levá-la comigo para casa da minha avó materna em Abrantes.

Obviamente, esqueci-me de copiar a receita, mas, de tanto a ler, lembrava-me de todos os ingredientes e fazia uma leve ideia das suas quantidades. Eis o que aconteceu: usei mais chocolate, menos açúcar, muito mais farinha, menos manteiga e forçosamente mais um ovo do que na receita original. E, extraordinariamente, aquilo que se poderia ter transformado num enorme desastre ficou delicioso! 

If I spend a lot of time without doing something, I will inevitably doubt my hability to redo it in a proper way. I admit, I'm a tiny little bit neurotic. So, I decided that nothing would be better than easter season for me to go back to cooking and, of course, I had to choose something simple and delicious. Brownies, of course. It would only be a question of writing down the recipe and taking it with me to my grandemother's house in Abrantes.

Obviously, I forgot to write down the recipe, but, since I read it so many times, I remembered all of its ingredients and had some idea of their quantities. So here's what happened: I used more chocolate, less sugar, a lot more flour, less butter and forcibly one more egg than the original recipe. And extraordinarily, what could have become a major disaster turned out to be delicious! 


  • 70 gr. de chocolate negro (dark chocolate)
  • 125 gr. de manteiga (butter)
  • 2 ovos (eggs)
  • 150 gr. de açúcar (caster sugar)
  • 60 gr. de farinha (all-purpose flour)
  • 100 gr. de nozes (walnuts)

Pré-aqueça o forno a 180ºC e barre uma forma quadrada ou rectangular com manteiga. Parta o chocolate em bocados, derreta-o em banho-maria e em lume branco, e deixe arrefecer. Corte a manteiga em cubos, derreta-a e deixe, também, arrefecer. Numa tigela, mexa os ovos e o açúcar, e adicione a manteiga e o chocolate. Peneire a farinha e junte-a à mistura. Corte as nozes grosseiramente e junte-as, também, à mistura. Coloque a massa na forma e leve a cozer por cerca de 15 a 20 min. A massa deve ficar bem húmida. Tire do forno, deixe arrefecer e corte em quadrados.

Preheat the oven at 180ºC and brush a square or rectangular tin with butter. Break the chocolate, melt it in a double pan and low heat, and let it cool. Cut the butter into cubs, melt it and let it cool also. In a bowl, mix the eggs with the sugar, and then add the butter and the chocolate. Sift in the flour. Roughly chop the walnuts and add them to the mixture. Place the dough in the tin and put it in the oven for 15 to 20 min. The dough should be really moist. Take it off the oven, let it cool and cut it into squares.

Délice au chocolat

Já o tinha visto. Já o tinha visto na estante da livraria, sem poder folheá-lo, preso que estava numa embalagem de plástico antipática e reluzente. Peguei no livro, senti-lhe o peso, e devorei a imagem estampada na capa. Impossível abandoná-la.

Hoje começo algo que eu espero tornar rotina. Digo espero, pois sou a pessoa menos disciplinada que conheço, e é-me muito difícil iniciar uma nova tarefa e torná-la rotineira. Este vai ser, portanto, um grande desafio. O desafio de fazer a maior parte das receitas que estão neste livro. Uma receita por semana e aventura de cozinhá-la. Esta não é uma ideia nova, e quem viu ou leu o Julie&Julia sabe bem a que me refiro, mas espero personalizá-la, aprender com ela, e partilhá-la convosco.

I had seen it. I had seen it on the shelf of the bookstore and couldn't browse through it, trapped as it was in an unsympathetic and shiny plastic package. I picked up the book, felt its weight, and devoured the printed image on its cover. It was impossible to leave it there.

Today I'm starting something I hope becomes routine. I say hope, because I'm the least disciplined person I know and it's very hard for me to start a new task and make it part of my habits. For that, this is going to be a big challenge. The challenge to make most of the recipes contained in this book. One recipe a week and the adventure of cooking it. This is not a new idea, and those of you who read or saw Julie&Julia know what I mean, but I really hope to make it mine, learn from it and share it with you.


E para começar bem esta aventura escolhi fazer Délice au chocolat (delícia de chocolate). Era uma escolha óbvia, pois para além do chocolate está classificada como fácil, e eu quis começar com o pé direito.

And to start this adventure in a good way I chose to make Délice au cholat (chocolate delight). For me it was an obvious choice, since besides the chocolate it is classified as easy, and I wanted to start with the right foot.


  • 4 ovos (eggs)
  • 150 gr. de açúcar em pó (icing sugar, unsifted)
  • 150 gr. de manteiga (butter)
  • 200 gr. de chocolate negro (dark chocolate)
  • 2 colheres sopa de farinha (tablespoons of flour)
  • 100 gr. de amêndoas em pó (ground almonds)
Pré-aqueça o forno a 220ºC e unte uma forma com manteiga. Separe as gemas e as claras dos ovos. Numa tigela, misture bem as gemas com o açúcar até obter uma textura cremosa. Deixe a manteiga amolecer. Parta o chocolate aos bocados e coloque-o a derreter em banho-maria. Depois de derretido, adicione-o à mistura de ovos e açúcar.

De seguida junte a farinha, as amêndoas em pó e a manteiga. Numa taça, bata as claras em castelo e junte-as pouco a pouco à mistura, incorporando-as muito bem. Ponha a massa na forma e leve ao forno por 20 min. É suposto ficar bem húmido. Deixe arrefecer e desenforme.

Preheat the oven at 220ºC and grease a mold with butter. Separate the egg yolks from the whites. In a bowl, mix the yolks with the icing sugar until you get a creamy mixture. Let the butter soften. Break the chocolate into pieces and melt it in a heatproof bowl over a pan of simmering water. After it is melted, add it to the eggs and sugar mixture.

Then add the flour, the ground almonds and the butter. In another bowl, beat the egg whites with an electric mixer until soft peaks form and add it, little by little, to the mixture and incorporate it well. Pour the mixture in the mold and place it in the oven for approx. 20 min. The cake should be very moist. Let it cool and unmold it.

A minha experiência: eu adoro fazer doces, mas devo dizer que não sou nem a mais rápida nem a mais hábil das cozinheiras, portanto quando algumas coisas começaram a correr mal (o chocolate derretido começou a endurecer a mistura dos ovos e do açúcar, uma colher cheia de chocolate caiu para o meio do chão e sujou tudo, a manteiga parecia esfarelar-se quando estava a tentar untar a forma) eu tive vontade de parar com tudo e ir fazer outra coisa qualquer. No entanto, bastaram-me três fundas respirações para tomar coragem e continuar. Assim, resolvi misturar a manteiga no chocolate derretido para torná-lo mais líquido, limpei rapidamente o chão e para compensar a minha falta de jeito a untar formas salpiquei um pouco de cacau por toda a forma para facilitar o desenformar. Há alturas em que temos de levantar a cabeça e seguir em frente.

My experience: I love to make desserts, but may I say that I'm not the fastest nor the most skilled of cooks, so when somethings went wrong (the melted chocolate thickened the eggs and sugar mixture, a spoon filled with chocolate fell to the floor and created what I call chocolate spatter, and the butter wouldn't grease the mold properly) I wanted to stop the whole thing and go somewhere else. However, after three deep breaths I got my courage back and continued. So, I decided to mix in the butter with the chocolate to make it a bit more liquid, quickly cleaned the floor and to compensate my grease clumsiness I sprinkled cocoa powder all over the mold to facilitate the unmolding. There are times when we have to rise to the occasion and move on.

Chocolate bomb

Há palavras mágicas. Há palavras doces. Há palavras sedutoras. E depois há o chocolate. Em pequenos imaginamos mundos fantásticos onde as estradas são feitas de açúcar, os rios de chocolate e chove cacau em pó. Em adultos continuamos a adorar chocolate e somos transportados para os sabores da nossa infância.

Eu sonho em ter uma chocolataria, mas esse é assunto para outra altura. Hoje mostro-vos uma receita que teria um lugar cimeiro numa chocolataria, mas que também terá o melhor dos destaques na vossa casa.

There are magical words. There are sweet words. There are seductive words. And then there's chocolate. When we are little we imagine fantastic worlds where the roads are made of sugar, the rivers are made of chocolate and the rain is made of cocoa powder. When we are adults we continue to love chocolate and often get transported to the flavours of our childhood.

I dream of having a chocolaterie, but that's a subject for some other time. Today I'm showing you a recipe that would have a major place in a chocolaterie, but can also demand attention in your home.


  • 300gr. creme de queijo (cream cheese)
  • 200gr. chocolate para culinária (chocolate for culinary purposes
  • 180gr. "Nutella" (chocolate paste)
  • 3 ovos (eggs)
  • 6 folhas de gelatina (gelatine sheets)
  • 2,5dl natas (sour cream)
  • açúcar q.b. (sugar)
  • palitos La Reine ou champanhe (champagne biscuts or sticks)
  • leite (milk)
  • licor de laranja ou outro (orange liquor or another)

Num tacho, coloque o creme de queijo, o chocolate, as gemas e o creme "Nutella" e leve ao lume em banho-maria. De seguida, adicione as folhas de gelatina, previamente demolhadas e derretidas num pouco de água a ferver (siga as instruções do fabricante). Deixe arrefecer a mistura.

Bata as claras em castelo e adicione à mistura arrefecida. Bata, também, as natas com açúcar para criar chantilly e junte à mistura.

Numa taça, combine o leite com o licor de laranja para molhar os palitos de champanhe. Forre uma tigela com papel de alumínio e, primeiramente, coloque os palitos de chamapanhe molhados na base e nos lados da tigela. Seguidamente, e de forma alternada, coloque a mistura de chocolate e os palitos de champanhe, e assim sucessivamente, e leve, de seguida, ao frigorífico por um mínimo de 4 horas ou até ficar consistente.

Reserve um pouco da mistura de chocolate. Desenforme a sobremesa e cubra-a com a mistura que reservou.

Mix the cream cheese, the chocolate, the egg yolks and the chocolate paste in a pan and melt the mixture in a very low heat. Then, add the gelatine sheets, that have been previously soaked and melted in a bit of boiling water (follow the manufacturer instructions). Let the mixture cool off.

Beat the egg whites with an electric mixer until soft peaks form and add it to the cooled mixture. Whisk the sour cream with sugar to form whip cream and add it to the mixture.

In a bowl, combine the milk with the orange liquor to dip in the champagne biscuts. Place foil paper in a bowl and, first, put the moist biscuts at the bottom and on the sides of the bowl. Secondly, pour in a bit of the chocolate mixture and then the moist biscuts. Do this until the bowl is full and reserve a bit of the chocolate mixture. Put the dessert in the fridge for about 4 hours.

Unmold the dessert and cover it with the reserved chocolate mixture.
