Tarte à l'orange

Estou a sentir falta dos sabores de Verão. Peixe fresco assado na brasa, limonada com hortelã, tomate com oregãos, e laranjas, o sabor punjente das laranjas. Lembram-me dias longos e conversas à beira-mar, refeições no quintal e sestas com janelas abertas. Por tudo isto decidi fazer uma tarte de laranja, que só sabe a laranja e a nada mais do que... laranja.

I'm missing Summer flavours. Grilled fresh fish, lemonade with mint, tomatoes with oregano, and orange, the rich flavour of oranges. They remind me of long days and conversations at the seaside, backyard meals and naps with open windows. Because of all that I decided to make an orange pie that only tastes like orange and nothing more than... orange. 

Primeiro, faça a massa ou a pâte sucrée (esta receita totaliza 500 gr.).
First, make the pastry or pâte sucrée (this recipe makes about 500 gr.).
  • 210 gr. farinha (all purpose flour)
  • 85 gr. açúcar em pó (icing sugar)
  • 1 ovo (egg)
  • 1/2 vagem de baunilha (vanilla pod)
  • 125 gr. manteiga amolecida (softened butter)
  • 25 gr. amêndoas em pó (ground almonds)
  • 1 clhr. café de sal fino (coffeespoon salt)
Peneire a farinha e o açúcar separadamente. Abra uma vagem de baunilha ao meio e use apenas as sementes de uma metade. Corte a manteiga em cubos, coloque-os numa taça e mexa levemente para ficar mais cremosa. De seguida, adicione o açúcar, a amêndoa em pó, o sal, as sementes de baunilha, o ovo e a farinha, mexendo bem sempre que cada ingrediente for adicionado para que fique bem incorporado. Forme uma bola com a massa, envolva-a com película aderente e coloque-a no frigorífico durante duas horas. Nota: se não tiver a vagem de baunilha pode substituí-la por uma colher de chá de extracto de baunilha.

Sift the flour and the sugar separately. Open a vanilla pod in two and use the seeds from one half. Cut the butter into small cubs, place them in a bowl and stirr it lightly just to make it more creamy. After that, add the sugar, the ground almonds, the salt, the vanilla seeds, the egg and the flour, and mix the ingredients well everytime you add one. Once every ingredient is well incorporated, make a ball out of the pastry, wrap it in cling film and place it in the fridge for two hours. Note: if you haven't got a vanilla pod you can replace it with one teaspoon of vanilla extract.


  • 250 gr. massa (pastry)
  • 3 laranjas (oranges)
  • 3 ovos (eggs)
  • 100 gr. açúcar (sugar)
  • 80 gr. manteiga derretida (melted butter)
Pré-aqueça o forno a 190ºC e barre uma tarteira com manteiga ou margarina. Estenda a massa até ficar com cerca de 3 mm de grossura e coloque-a na tarteira. Pique o fundo com um garfo, cubra-o com um disco de papel vegetal e feijões secos. Baixe a temperatura do forno para 180ºC e coloque a massa no forno por 20 min.

Raspe as três laranjas e tire-lhes o sumo. Numa taça, mexa os ovos, o açúcar, a manteiga, o sumo e a raspa das laranjas, e mexa bem todos os ingredientes.

Tire a massa do forno (retire o papel vegetal e os feijões secos) e despeje a mistura. Leve ao forno de novo por 15 min.

Preheat the oven at 190ºC e brush a tin with butter or margerine. Roll out the pastry until it is about 3 mm thick and line it onto the tin. Pick the bottom of the pastry with a fork, cover it with a disc of parchment paper and dried beans. Lower the oven temperature for 180ºC and place the tin in the oven for 20 min.

Take the juice and the zest off the oranges. In a bowl, mix in the eggs, the sugar, the butter, the juice and the orange zest.

Take the tin off the oven (remove the parchment paper and the dried beans) and pour in the mixture. Place it in the oven for 15 min.

Tarte aux pommes

As maçãs sabem a infância, a frescura, a férias de Verão na casa dos avós, a luz, a sol. Há qualquer coisa numa boa maçã, das que estalam quando se cortam em metade, que me faz pensar em tudo isto. E quando o cheiro da tarte de maçã e canela invade a minha casa, acho que não há sentimento mais reconfortante do que este. A certeza de que, ao juntar o ingrediente A ao ingrediente B, vou obter sempre o mesmo resultado maravilhoso. Tão simples e tão bom.

Apples taste like childhood, freshness, summer vacations at our grandparents house, light, sun. There's something about a good apple, like the ones that pop when you cut them in half, that makes me thing about all this things. And when the smell of the apple pie and the cinnamon invades my house I think there isn't a more comforting feeling than this. The certainty that, by addind the ingredient A to the ingredient B, I'm going to get the same wonderful result every single time. So simple and so good.  

  • 3oo gr. de massa (pastry)
  • 1 kg. de maçãs (apples)
  • 1 ovo (egg)
  • pitada de canela a gosto (pinch of cinnamon at your taste)
  • 200 gr. de açúcar em pó (icing sugar)
  • 50 gr. de farinha (all-purpose flour)

Pré-aqueça o forno a 200ºC e barre uma tarteira com manteiga. Numa tigela, bata o ovo com uma pitada de canela e uma colher de sopa de açúcar em pó. Descasque as maçãs, corte-as em quartos e depois em finas lâminas.

Depois de colocar a massa na forma, ponha a mistura de ovo e canela no fundo e, de seguida, espalhe 150 gr. de açúcar em pó, mais uma pitada de canela e a farinha. Disponha as maçãs. Leve ao forno por 45 min. Logo que a tarte esteja fria, polvilhe o resto do açúcar em pó e está pronta a servir.

Preheat the oven at 200ºC and brush a pie tin with butter. In a bowl mix in the eggs with a pinch of cinnamon and a tablespoon of icing sugar. Peel the apples, cut them in quarters and then laminate them.

After placing the pastry on the pie tin, pour the egg and cinnamon mix, plus 150 gr. of icing sugar, another pinch of cinnamon and the flour. Lay in the apples. Take it to the oven for 45 min. When the pie is cold, sprinkle the rest of the icing sugar and it's ready to serve.


Há coisas que se perdem na tradução. No meu caso, e mesmo depois de ter lido a receita umas 10 vezes, só depois da tarte estar cozinhada é que me apercebi de que interpretei mal um processo da receita. Em vez de colocar a mistura toda do ovo e da canela no fundo da tarte, percebi que metade dessa mistura ficaria no fundo e a outra metade colocar-se-ia antes das maçãs. Daí a textura tão cremosa que se vê nas fotos. Nada de desânimos. Tenho a certeza de que está óptima!

Some things get lost in translation. In my case, and even after reading the recipe for about 10 times, it was only after the pie was cooked that I realized that I missinterpreted a part of the recipe. Instead of placing all the egg and cinnamon mix on the bottom of the pie, I understood that half of the mixture would be in the bottom and the other half would be placed right before the apples. Hence the cream you see in the photos. No worries for me. I'm sure it's great!

Tarte aux kiwis

Confesso, a receita original não é feita com kiwis, mas sim com ameixas. No entanto, e em defesa da minha honra, devo apelar razões de ordem ecológica e social. Sim, eu tinha uma caixa de kiwis praticamente intacta na cozinha e, sendo uma defensora da poupança e do aproveitamento de recursos, não me pareceu correcto gastar dinheiro em mais fruta quando tinha tanta por aproveitar.

Para além de tudo isso, esta receita é tão fácil de executar que pode ser feita com todo o tipo de fruta. Já imagino morangos, maçãs, pêras, mirtilos, cerejas, amoras, o que quiserem.

Ok, I confess. The original recipe isn't made with kiwis, but plums. However, I must defend my honor by appealing for ecological and social reasons. Yes, I had a box of kiwis in my kitchen and, being an advocate for saving money and good use of resources, it just didn't feel right to spend money on more fruit when I had plenty to work with.

Besides, this is such an easy recipe to make that it can be done with all kinds of fruit. I can already image strawberries, apples, pears, blueberries, cherries, blackberries, you name it.



Para a massa (for the pastry)* - também conhecida por pâte brisée (also known as pâte brisée):
*estas quantidades dão para 500 gr. de massa e o excedente pode ser congelado
*this quantities make 500 gr. of pastryand the excess can be frozen
  • 190 gr. manteiga à temperatura ambiente (butter at room temperature)
  • 1 colher café de sal fino (teaspoon of salt)
  • 5 cl. de leite frio ou água (cold milk or water)
  • 250 gr. farinha (all-purpose flour) 
Coloque a manteiga numa tigela e mexa com uma espátula até ficar mais cremosa. De seguida, junte o leite ou a água e mexa mais um pouco. Não é necessário tentar incorporar o líquido todo na manteiga. Adicione a farinha e mexa até que os ingredientes se juntem. Para trabalhar a massa, deite a mistura num balcão e trabalhe-a com as mãos. Logo que se forme uma massa consistente, faça um bola, embrulhe-a em papel aderente e deixe-a a descansar no frigorífico por duas horas.

Place the butter in a bowl and stir it with a spatula to make it more creamy. Then, add the milk or the water and stir a little bit more. You don't have to incorporate all the liquide in the butter. After that, add the flour and mix until the ingredients are joined. To work the dough, place the mixture on a counter and knead it with your hands. When the dough is consistent, make a ball, wrap it in adherent paper and leave it to rest in the fridge for two hours.



Para a tarte (for the pie):
  • 300 gr. massa (pastry)
  • 500 gr. fruta (fruit)
  • 110 gr. açúcar em pó (icing sugar) 
Pré-aqueça o forno a 200ºC. Estenda a massa até ficar com cerca de 4 mm de grossura e coloque-a numa tarteira já barrada com manteiga. Corte o excedente no rebordo e pique o fundo da massa levemente com um garfo.

De seguida, polvilhe o fundo com 40 gr. de açúcar em pó e disponha a fruta por cima. Polvilhe mais 40 gr. de açúcar em pó por cima da fruta. Leve ao forno por 30 min. e deixe arrefecer completamente. Polvilhe a tarte com as restantes 30 gr. de açúcar em pó e está pronta a servir.

Preheat the oven at 200ªC. Roll out the dough so it can be approx. 4 mm thick and then line it in a pie tin that has already been brushed with butter. Cut off the excess of pastry in the edges and pick slightly the bottom of the pastry with a fork.

Then spronkle the bottom of the pastry with 40 gr. of icing sugar and dispose the fruit on top. Sprinkle another 40 gr. on top of the fruit. Put it in the oven for 30 min. and let it cool completely. Sprinkle the pie with the rest 30 gr. of icing sugar and it is ready to serve.

E o que posso dizer da experiência? A massa ficou surpreendentemente boa, tendo em conta que ia tendo uma crise de nervos por causa da "mistura" da manteiga com o leite, que resolvi logo ao saltar esse ponto e adicionar a farinha. Quanto aos kiwis, e apesar de terem estado uma boa semana ainda a amadurecer na caixa, devo dizer que estão um pouco ácidos para o meu gosto pessoal, mas já resolvi essa situação ao acompanhar a tarte com uma bola de gelado de baunilha. Outra coisa, o açúcar em pó que eu polvilhei por cima da tarte quando esta já estava mais do fria foi constantemente absorvido pela fruta, portanto perdeu-se o efeito romântico nessa parte.

And what can I say of the experience? The pastry was surprisingly good, especially after I had an almost meltdown because of the butter and milk "mixture" that I solved by skipping that point and adding the flour right away. As for the kiwis, and despite the fact that they had been maturing for a week, I must say they're a bit sour for my taste, but I solved the problem by pairing the pie with a good ice-cream ball. Oh, and one other thing. I sprinkled the icing sugar on top of the pie when it was super cold and it was constantly absorbed by the fruit. So, the pretty efect was lost in that part.

Upside-down apple pie


É verdade. Esta é mesmo uma tarde de maçã invertida. Invertida porque todos os ingredientes são dispostos ao contrário do que é habitual. Parece estranho? Talvez. Será que resulta? A 100% e o sabor é óptimo!

It's true. This is really an upside-down apple pie. Upside-down because all the ingredients are disposed contrary to the normal way of things. Does it sound strange? Maybe. Does it work? 100% and it tastes great!


Nesta receita não há medidas precisas, uma vez que tudo depende do tamanho da tarteira que quiser usar, e pode pôr tudo a olho. NOTA: deve usar uma tarteira sem fundo removível.

Aqueça o forno a 190ºC. Barre bem a tarteira com margarina. De seguida, ponha açúcar, maçã cortada às fatias (não precisam de ser muito finas), sumo de limão e canela. Depois coloque a massa folhada por cima dos ingredientes e leve ao forno até esta estar cozida.

Quando tirar a tarteira do forno, deve desenformá-la como se fosse um bolo.

In this recipe there's no precise measures, because everything depends on the size of the pie tray you'll use, so you can put things in a free way. NOTE: you can't use a tray with a removable bottom.

Preheat the oven at 190ºC. Spread the margerine evenly throughout the tray. After that, put the sugar, sliced apple (the slices don't need to be too thin), lemon juice and cinnamon. Then place the puff pastry on top of the ingredients and put it in the oven until it's cooked.

When you take it off the oven, you have to unmold it like a cake.
