Lemon & coconut muffins

Verão e fazer uso do forno são duas coisas que, pelos menos em minha casa, são muito pouco compatíveis. Por isso, tenho tentado escolher receitas simples e rápidas, que me façam passar o menos tempo possível dentro da cozinha e envolvam muito pouco esforço braçal.

Numa dessas ocasiões, resolvi adaptar uns muffins da Nigella Lawson ao que eu tinha na despensa: amêndoas raladas passaram a coco ralado, laranjas passaram a limões, leite normal passou a leite de soja. Isto podia transformar-se num autêntico desastre, mas não transformou!

Summer and using the oven are two things that, at least in my house, haven't much in common. So I've been trying to choose simple and quick recipes that make me spend the less possible time inside the kitchen and don't involve a lot of arm exercise.

On one of those occasions, I decided to adapte a muffin recipe from Nigella Lawson to what I had in my pantry: grated almonds became grated coconut, oranges gave place to lemons, and soy milk substituted normal milk. This could possibly become a disaster, but it didn't!

 

  • 75 gr. manteiga sem sal (unsalted butter)
  • 250 gr. farinha com fermento (self-raising flour)
  • 25 gr. coco ralado (grated coconut)
  • 1/2 colher chá bicarbonato de sódio (teaspoon sodium bicarbonate)
  • 1 colher chá fermento em pó (teaspoon baking powder)
  • 75 gr. açúcar (sugar)
  • raspa de um limão (zest of one lemon)
  • 100 ml sumo de limão natural (lemon juice, fresh)
  • 100 ml leite de soja (soy milk)
  • 2 ovos (eggs)
Pré-aqueça o forno a 200ºC. Derreta a manteiga e reserve. Misture a farinha, o coco ralado, o bicarbonato, o fermento em pó, o açúcar e a raspa de limão numa taça grande. Noutra taça, misture o sumo de limão e o leite, e junte depois os ovos e a manteiga derretida (já fria).

De seguida, misture os ingredientes líquidos com os sólidos e vá mexendo tudo com um garfo. A massa deve ficar grumosa e os ingredientes o menos misturados possível.

Coloque os invólucros de papel nas formas de queque, tire a massa para cada um deles e leve ao forno por 20 min. Serve cerca de 12 queques.

Preheat the oven at 200ºC. Melt the butter and reserve. Mix the flour, grated coconut, bicarbonate, baking powder, sugar and lemon zest into a big bowl. In another bowl, mix in the lemon juice and the milk, and then add the eggs and the melted butter (now cooled).

Next, combine the liquid ingredients with the solid ones and mix everything with a fork. The mixture should be lumpy and not so homogeneous.

Place the paper cups on the muffin tin, pour in the mixture and put it in the oven for 20 min. Serves about 12 muffins.

Cinnamon & apple muffins


Lembram-se desta receita? Cedo percebi que seria uma base perfeita para fazer mil e uma receitas de muffins com ingredientes diferentes. Neste caso, basta substituir o coco e a compota de amoras por canela (a gosto) e maçã, e fica igualmente delicioso.

Remember this recipe? I soon realized that it would be a perfect base for uncountable muffins recipes with different ingredients. In this case, you just have to substitute the coco and blackberry jam for cinnamon and apple, and it tastes delicious.

How to rescue a recipe misfortune?


Era uma vez uma menina que gostava de folhear um livro de receitas vezes e vezes sem conta. De manhã, de cappuccino bebido, decidiu que, finalmente, ia fazer uma dessas receitas. "Coisa fácil e rápida", pareceu-lhe.

Deu uma vista de olhos na receita, fez os ajustamentos do costume, e meteu mãos à obra. Empreendimento concluído, decidiu provar. Doce, muitíssimo doce, demasiado doce. Como salvar este infortúnio e torná-lo adequado até para não-diabéticos? Um pouco de farinha e fermento para aqui, mais dois ovos e leite para ali, uma mexidela acolá, et voilá: muffins de chocolate e nozes. E assim se salvou uma manhã de potencial ruína culinária.

Once upon a time there was a girl that liked to browse through a recipe book over and over again. In the morning, with the cappuccino already drunk, she finally dediced to do one of the recipes. "Something quick and easy", she thought.

She looked at the recipe again, made the usual ajustments, and got down to business. When it was done, she decided to taste it. It was sweet, super sweet, way too sweet. So how to fix this misfortune and make it appropriate even to non-diabetic people? A little bit of flour and baking powder here, two eggs and milk there, and a good mix everywhere, et voilá: chocolate and walnuts muffins. And that's how she rescued one morning from its potencial culinary disaster.

Coconut and blackberry jam muffins


Para verem a receita original podem espreitar este blogue. Eu, como já vem sendo hábito, fiz algumas alterações à receita, até porque não tinha todos os ingredientes e não sou muito fanática por cumprir as receitas à risca.

To see the original recipe, you can check this blog. I didn't quite follow the recipe exactly, mostly because I didn't have all the ingredients and also because I'm not a big fan of following the exact steps of recipes.


  • 340gr. farinha (all purpose flour)
  • 2 colheres chá fermento (teaspoons baking powder)
  • 2 colheres sopa coco ralado (tablespoons dried ground coconut)
  • pitada de sal (pinch of salt)

  • 125gr. manteiga derretida (melted butter)
  • 130gr. açúcar (sugar)
  • 1 colher chá aroma baunilha (vanilla syrup)
  • 130ml. leite (milk)
  • 2 ovos (eggs)
  • compota de amoras (blackberry jam) ou amoras frescas (or fresh blackberries)

Aqueça o forno a cerca de 190ºC e coloque formas de papel num tabuleiro próprio para muffins (se não tiver pode usar as formas dos pastéis de nata, por exemplo).

Numa tigela (A), misturam-se os ingredientes sólidos (menos o açúcar). Noutra tigela (B), misturam-se cuidadosamente todos os outros ingredientes, menos a compota de amoras, até se obter uma mistura homogénea.

De seguida, juntam-se os ingredientes B aos A gradualmente até se obter uma massa homogénea. Neste ponto, adiciona-se à mistura a compota de amoras e bate-se muito bem para que a compota se distribua uniformemente pela massa. IMPORTANTE: convém que a compota seja algo dura para que não se misture totalmente com a massa.

Encha as formas de papel e leve ao forno por 17-19 min. Antes de tirar os muffins do tabuleiro, espete um palito para ver se estão devidamente cozidos.

Preheat the oven at 190ºC and fill a muffin tray with paper cups.

In one bowl (A), mix all the dry ingredients (minus the sugar). In another bowl (B), carefully mix the melted butter, sugar, eggs, milk and the vanilla syrup.

Then, gradually mix the ingredients B with the ingredients A, until it's homogeneous. At this point you add the blackberry jam and stir it well. IMPORTANT: the jam should be a little hard so it doesn't dissolve completely.

Fill the paper cups and put it in the oven for 17-19 min. Before you take the muffins out, check with a toothpick to see if they are cooked.
