Inspiration Thursday

I had seen it. I had seen it on the shelf of the bookstore and couldn't browse through it, trapped as it was in an unsympathetic and shiny plastic package. I picked up the book, felt its weight, and devoured the printed image on its cover. It was impossible to leave it there.

Today I'm starting something I hope becomes routine. I say hope, because I'm the least disciplined person I know and it's very hard for me to start a new task and make it part of my habits. For that, this is going to be a big challenge. The challenge to make most of the recipes contained in this book. One recipe a week and the adventure of cooking it. This is not a new idea, and those of you who read or saw Julie&Julia know what I mean, but I really hope to make it mine, learn from it and share it with you.

And to start this adventure in a good way I chose to make Délice au cholat (chocolate delight). For me it was an obvious choice, since besides the chocolate it is classified as easy, and I wanted to start with the right foot.

  • 4 ovos (eggs)
  • 2 colheres sopa de farinha (tablespoons of flour)
Deixe a manteiga amolecer.

Deixe arrefecer e desenforme.

Preheat the oven at 220ºC and grease a mold with butter. Separate the egg yolks from the whites. In a bowl, mix the yolks with the icing sugar until you get a creamy mixture. Let the butter soften. Break the chocolate into pieces and melt it in a heatproof bowl over a pan of simmering water. After it is melted, add it to the eggs and sugar mixture.

Then add the flour, the ground almonds and the butter. In another bowl, beat the egg whites with an electric mixer until soft peaks form and add it, little by little, to the mixture and incorporate it well. Pour the mixture in the mold and place it in the oven for approx. 20 min. The cake should be very moist. Let it cool and unmold it.

No entanto, bastaram-me três fundas respirações para tomar coragem e continuar.

My experience: I love to make desserts, but may I say that I'm not the fastest nor the most skilled of cooks, so when somethings went wrong (the melted chocolate thickened the eggs and sugar mixture, a spoon filled with chocolate fell to the floor and created what I call chocolate spatter, and the butter wouldn't grease the mold properly) I wanted to stop the whole thing and go somewhere else. However, after three deep breaths I got my courage back and continued. So, I decided to mix in the butter with the chocolate to make it a bit more liquid, quickly cleaned the floor and to compensate my grease clumsiness I sprinkled cocoa powder all over the mold to facilitate the unmolding. There are times when we have to rise to the occasion and move on.

American cookies

Biscoitos tradicionais americanos.

Traditional american cookis. Just pronouncing this words makes me feel immediately happy. Ok, it's important to say that I normally have a really positive mood, but that alone can't take away and will never take away these cookies well-earned credit.

Thanks to the holidays spirit and a cooking show with great timing, the recipe was taken and a big bunch of cookies were made to give for Christmas: original, delicious, handmade and cheap. Do I need to say more?

Another very important aspect about this recipe is that the quantities can make lots and lots of cookies so, if you belong to a medium sized family, it's best to use just half of it.
  • 2 chávenas chá de manteiga (cups of butter)
  • 2 chávenas chá de açúcar (cups of sugar)
  • 3 chávenas chá de açúcar (cups of brown sugar)
  • 4 ovos (eggs)
  • 2 colheres sopa de baunilha (teaspoon vanilla extract)
  • 4 chávenas chá de farinha trigo (cups of all purpose flour)
  • 5 chávenas chá de aveia liquidificada (cups of blended oatmeal)
  • 1 colher café de sal (pinch of salt)
  • 3 chávenas chá de nozes picadas (cups of chopped nuts)
  • 1 kg. chocolate meio amargo picado (chopped semisweet chocolate)
Pré-aqueça o forno a 200ºC.

Preheat the oven at 200ºC. In a bowl, put the butter and the sugars and mix until it turns into a cream. Then add the eggs and the vanilla and beat well. Tranfer the mix to a bigger bowl.

In that bowl add the flour, the oatmeal (after it's blended it turns into a powder), the salt, the baking powder and the soda and blend them well together. Then add the nuts and the chocolate until it turns into a dough. Make little balls and place them in a tray at about 5 cm apart from each other. Put it in the oven for 10 min. Hint: with the heat from the oven, the balls will expand and become cookies so, the bigger the ball, the bigger the cookie.

Almond & cinnamon biscuits

Before I started to write this post, I carefully meditated about my lack of organization and self-discipline, and also about the recurrent fact that I'm almost always behind when it comes to some goals I set myself to achieve. That's something I've been trying to change, but, at times, just can't.

Surely, you must have realized by now that this post has been waiting patiently in my drafts folder for a chance to show itself to the public. For some time.

I really like biscuits. They're side by side with chocolates, muffins and miniature cookies. These biscuits are easy, quick to do and quite tasty, besides being a good base for more ingredients, if you feel like mixing up some flavours.

Para a massa (for the dough):

  • 200gr. amêndoas peladas (blanched almonds)
  • 1/3 chávena açúcar (cup caster sugar)
  • 1/3 chávena açúcar em pó (cup icing sugar)
  • 3 colheres chá canela em pó (teaspoons groud cinnamon)
  • 3/4 chávena farinha (cup plain flour)
  • 2 claras ovo (egg whites)

Para o glacé de baunilha (for the vanilla icing):

  • 12/3 chávena açúcar em pó (cups pure icing sugar)
  • 1 clara ovo, ligeiramente batida (egg white, lighly beaten)
  • 1/2 essência baunilha (vanilla essence)

Aqueça o forno a 150ºC.

Preheat the oven at 150ªC. Place almonds, sugars, cinnamon and flour in a food processor bowl and mix it for 30 seconds or until the mixture is fine and crumbly. Then add the egg whites and process it for another 30 seconds or until a soft dough forms. Remove the dough from the food processor bowl and turn it onto lightly floured surface. Knead it until it gets a bit more firm. Roll out the dough, cut the shapes and place them onto a tray, previously lined with baking paper. Bake for 20 min. or until golden.

To make the vanilla icing: put the icing sugar into a bowl. Make a well in the centre and add combined egg white and vanilla essence. Beat until the icing sugar is well incorporated in the mixture. As soon as the biscuits cool, spread the biscuits with the vanilla icing.

Chocolate bomb

There are magical words. There are sweet words. There are seductive words. And then there's chocolate. When we are little we imagine fantastic worlds where the roads are made of sugar, the rivers are made of chocolate and the rain is made of cocoa powder. When we are adults we continue to love chocolate and often get transported to the flavours of our childhood.

I dream of having a chocolaterie, but that's a subject for some other time. Today I'm showing you a recipe that would have a major place in a chocolaterie, but can also demand attention in your home.

  • 300gr. creme de queijo (cream cheese)
  • 200gr. chocolate para culinária (chocolate for culinary purposes
  • 180gr. "Nutella" (chocolate paste)
  • 3 ovos (eggs)
  • 6 folhas de gelatina (gelatine sheets)
  • 2,5dl natas (sour cream)
  • açúcar q.b. (sugar)
  • palitos La Reine ou champanhe (champagne biscuts or sticks)
  • leite (milk)
  • licor de laranja ou outro (orange liquor or another)

Deixe arrefecer a mistura.

Mix the cream cheese, the chocolate, the egg yolks and the chocolate paste in a pan and melt the mixture in a very low heat. Then, add the gelatine sheets, that have been previously soaked and melted in a bit of boiling water (follow the manufacturer instructions). Let the mixture cool off.

Beat the egg whites with an electric mixer until soft peaks form and add it to the cooled mixture. Whisk the sour cream with sugar to form whip cream and add it to the mixture.

In a bowl, combine the milk with the orange liquor to dip in the champagne biscuts. Place foil paper in a bowl and, first, put the moist biscuts at the bottom and on the sides of the bowl. Secondly, pour in a bit of the chocolate mixture and then the moist biscuts. Do this until the bowl is full and reserve a bit of the chocolate mixture. Put the dessert in the fridge for about 4 hours.

Unmold the dessert and cover it with the reserved chocolate mixture.

Chicken pies

What should we do with the leftovers of almost half of a take-away grilled chicken, that loyal friend that saves any meal? There's a wide range of culinary solutions, but few are so tasty and traditional as pies.

Para a massa (for the dough):

  • 200gr. farinha (all purpose flour)
  • 80gr. manteiga (butter)
  • 5/6 colheres sopa leite (tablespoons milk)
  • 1 ovo (egg)
  • pitada de sal (pinch of salt)

Para o recheio (for the filling):

  • azeite (olive oil)
  • cebola (onion)
  • alho (garlic)
  • frango desfiado (chopped chicken)
  • cenoura ralada (grated carrot)
  • presunto picado (chopped ham)
  • farinha (all purpose flour)
  • leite (milk)

Aqueça o forno a 190ºC.

First of, mix all of the necessary ingredients for the dough and gently start molding until you get an even texture. Then, spread butter and flour into the pie molds and unroll the dough in each of them. You should always leave some excess of dough out of the mold margin. When every mold is filled, leave the dough to rest for 45min.

Since my filling wasn't made by following a recipe, it's up to you to decide on the amount of filling you want to make. In this case, and using a pan, just make a simple base with olive oil, chopped onions and garlic, and then add the chopped chicken, the grated carrot and the finely chopped ham. Leave it in the heat for some minutes, enough so that all of the ingredients blend together. Then, add a little bit of flour and milk to thicken the mixture.

Preheat the oven at 190ºC. Place the filling in the molds (more or less accordingly to your own taste) and finish of the pie by placing a dough cover on top of the filling. To seal of the pie, just pull in the dough excess you left in the mold margin. Now you only have to brush the pies with an egg yolk and put it in the oven!

Orange & almond cake

I'm finally back to the blog and my little food adventures after a forced interruption. Ironically, a short time after I started the blog, my once occasional stomach aches became more and more intense, so now I'm trying to restrain my appetite and cutting off some eating habits that aren't the best for me.

And what better way to come back than with a light, colourful and tasty recipe?

Para o bolo (for the cake):

  • 5 ovos (eggs, separated)
  • 100gr. açúcar (sugar)
  • 100gr. farinha (all purpose flour)
  • 1 colher chá fermento (teaspoon baking powder)
  • 100gr. margarina derretida (melted margerine)
  • 75gr. amêndoas sem pele laminadas (skinless almonds, chopped)

Para a calda (for the syrup):

  • raspa de uma laranja (one orange zest)
  • 100gr. açúcar (sugar)
  • 3dl. sumo de laranga (orange juice)

Aqueça o forno a 190ºC. Misture bem as gemas, o açúcar, a farinha, o fermento e a margarina.

Preheat the oven at 190ºC. Spread the margerine evenly throughout the cake pan, then place parchment paper at the bottom of the pan and spread a bit of margerine in the paper too. Mix the egg yolks, the sugar, the flour, the baking powder and the melted margerine. After that, beat the egg whites with an electric mixer until soft peaks form, and softly add them to the mixture. Sprinkle half of the almonds in the bottom of the pan, pour in the mixture and sprinkle the top with the rest of the almonds.

Put the pan in the oven and, once the cake is cooked, stick it with a toothpick and pour the syrup.

Syrup: Mix the orange juice and zest with the sugar and place it in the stove for 3min., just to be a bit more consistent.
