My Easter treat: Brownies


Sempre que fico muito tempo sem fazer alguma coisa, é inevitável duvidar da minha capacidade de voltar a fazê-la, e bem. Admito, sou um bocadinho de nada neurótica. Assim, decidi que nada seria melhor do que aproveitar a época pascoal para voltar à cozinha e fazer algo tão simples quanto delicioso. Brownies, pois então. Seria apenas uma questão de escrever a receita e levá-la comigo para casa da minha avó materna em Abrantes.

Obviamente, esqueci-me de copiar a receita, mas, de tanto a ler, lembrava-me de todos os ingredientes e fazia uma leve ideia das suas quantidades. Eis o que aconteceu: usei mais chocolate, menos açúcar, muito mais farinha, menos manteiga e forçosamente mais um ovo do que na receita original. E, extraordinariamente, aquilo que se poderia ter transformado num enorme desastre ficou delicioso! 

If I spend a lot of time without doing something, I will inevitably doubt my hability to redo it in a proper way. I admit, I'm a tiny little bit neurotic. So, I decided that nothing would be better than easter season for me to go back to cooking and, of course, I had to choose something simple and delicious. Brownies, of course. It would only be a question of writing down the recipe and taking it with me to my grandemother's house in Abrantes.

Obviously, I forgot to write down the recipe, but, since I read it so many times, I remembered all of its ingredients and had some idea of their quantities. So here's what happened: I used more chocolate, less sugar, a lot more flour, less butter and forcibly one more egg than the original recipe. And extraordinarily, what could have become a major disaster turned out to be delicious! 


  • 70 gr. de chocolate negro (dark chocolate)
  • 125 gr. de manteiga (butter)
  • 2 ovos (eggs)
  • 150 gr. de açúcar (caster sugar)
  • 60 gr. de farinha (all-purpose flour)
  • 100 gr. de nozes (walnuts)

Pré-aqueça o forno a 180ºC e barre uma forma quadrada ou rectangular com manteiga. Parta o chocolate em bocados, derreta-o em banho-maria e em lume branco, e deixe arrefecer. Corte a manteiga em cubos, derreta-a e deixe, também, arrefecer. Numa tigela, mexa os ovos e o açúcar, e adicione a manteiga e o chocolate. Peneire a farinha e junte-a à mistura. Corte as nozes grosseiramente e junte-as, também, à mistura. Coloque a massa na forma e leve a cozer por cerca de 15 a 20 min. A massa deve ficar bem húmida. Tire do forno, deixe arrefecer e corte em quadrados.

Preheat the oven at 180ºC and brush a square or rectangular tin with butter. Break the chocolate, melt it in a double pan and low heat, and let it cool. Cut the butter into cubs, melt it and let it cool also. In a bowl, mix the eggs with the sugar, and then add the butter and the chocolate. Sift in the flour. Roughly chop the walnuts and add them to the mixture. Place the dough in the tin and put it in the oven for 15 to 20 min. The dough should be really moist. Take it off the oven, let it cool and cut it into squares.

Inspiration Thursday

Chocolate. Uma vez provado, para sempre viciado. Vivemos uma vida inteira constantemente consolados pela sua presença reconfortante em todas as prateleiras de supermercados, em todas as vitrines de pastelarias, em todos os segundos publicitários. Mas, acreditem em mim, nunca seremos verdadeiramente felizes até provarmos um bombom artesanal.

Chocolate. Once you taste it, you can never go back. We live our whole lives constantly comforted by its warming presence in every supermarkets' stand, in every bakerys' window, in every comercials' seconds. But believe me when I say we will never be truly happy until we taste a handmade chocolate.

me.london.lover

Este post já há muito que vos era devido, e o seu rascunho esteve guardado desde que regressei, mas ainda vazio de palavras, pois por muito que quisesse escrever, o facto de estar doente entorpecia-me sempre a capacidade de olhar para o monitor sem ficar com dores de cabeça. É verdade, fui constipada e voltei para ficar irremediavelmente engripada e afastada durante muito tempo da cozinha e das minhas receitas semanais.

Mas nem tudo foram desventuras, e creio que as fotografias provam isso mesmo. E a mim provam-me que ainda tenho saudades. Londres é como uma matryoshka. Há uma cidade dentro da cidade dentro da cidade e por aí fora. O gozo está em ir descobrindo as camadas.

This is a long due post and its draft has been saved ever since I came back, but still empty of words. Even with my will to write, the fact that I was sick really kept me from looking at the screen for too long or else I would get a headache. In fact, I went to London with a cold and came back to be hopelessly with a flu and away from my kitchen and weekly recipes.

But not all were misadventures, and I think the photos confirm it. To me they show that I'm still a bit nostalgic. London is like a matryoshka doll. There's a city inside a city inside a city and so forth. The pleasure comes from finding the layers.

Off to... London!

Vou estar a revisitar Londres até dia 16 e espero voltar ultra inspirada por todas as chocolatarias, pastelarias, casas de chá, cafés, pubs e muito mais! Por este motivo, o Inspiration Thursday não será publicado esta semana, nem a receita semanal. Quando voltar, tratarei de compensar a minha falta. Até lá!

I'm going to revisite London until the 16th and I hope to get back fully inspired by all the chocolateries, bakeries, tea houses, coffee shops, pubs and much more! Because of this, Inspiration Thursday won't be published this week, as well as the weekly recipe. When I get back, I'll work on making up for the lost time. See you!

Inspiration Thursday

De cada vez que dizemos algo em francês, senti-mos mais europeus e eruditos, non? Eu, pelo menos, sinto. Imagino-me sentada numa esplanada com mesas de ferro envelhecido, a tomar o meu café e a ler as cartas de Simone Beauvoir a Jean-Paul Sartre. Sim, é um tremendo cliché, mas sabe tão bem. Por isso, adoro dizer croissants. E adoro comer croissants. E acreditem que daqui a uns tempos irei dizer que adoro fazer croissants!

Every time we say something in french, we immediately feel more european and wise, non? I, at least, do. I imagine myself sitting down in a terrace with old iron table, drinking my coffee and reading the letters from Simone Beauvoir to Jean-Paul Sartre. Yes, it is a tremendous cliché, but it feels so good. Therefore, I love to say croissants. And I love to eat croissants. And believe me that soon I'll say that I love making croissants!

Inspiration Thursday

Pode haver alguém por aí que não goste de cupcakes, mas parece inegável que, mesmo que não se goste do seu sabor, tem de se gostar do seu aspecto! São fotogénicos e são muito sedutores!

There may me someone out there that doesn't like cupcakes, but it seems undeniable that, even without liking its flavour, you have to like its looks! They are photogenic and sooo seductive!

Scones - Two days later

Não sou pessoa de me irritar quando as coisas correm mal, mas quando correm terrivelmente mal e eu só me tenho a mim como principal responsável, aí sim, irrito-me. E muito.

Fiz esta receita pela primeira vez no domingo, tendo em conta de que me manteria dentro do prazo que estabeleci para mim mesma - fazer uma receita deste livro uma vez por semana. O resultado não podia ter sido pior e passei o resto do dia a rever todas as minhas acções na cozinha e a compará-las com o que estava indicado na receita. Infelizmente, não tinha feito nada de errado. Digo infelizmente, pois quando sabemos que cometemos um erro podemos remediá-lo e tudo volta ao normal.

I'm not a person to get irritated when things go wrong, but when they go terribly wrong and I'm the only one responsible for that, that's when I get irritated. A lot.

I made this recipe for the first time on Sunday, keeping in mind that I would stay in time for the challenge I've set for myself - make a recipe from this book once a week. The result couldn't have been worst and I spent the rest of the day reviewing my actions in the kitchen and matching them with the recipe. Unfortunately, I hadn't make anything wrong. I say unfortunately because when we realize we made a mistake there's always a chance to fix it and go back to normal.

      
Aqui está a receita original (here is the original recipe):

  • tigela de chá (bowl of tea)
  • 120 gr. de passas (raisins)
  • 240 gr. de farinha (all purpose flour)
  • pitada de sal (pinch of salt)
  • 90 gr. de açúcar (caster sugar)
  • 10 gr. de fermento (baking powder)
  • 100 gr. de manteiga (unsalted butter)
  • 20 cl. de leite (milk)
  • 1 ovo (egg)
Pré-aqueça o forno a 200ºC. Prepare o chá e coloque as passas de molho durante uma hora, após a qual as deve retirar e secar. Peneire a farinha para uma tigela e adicione o açúcar, o fermento e uma pitada de sal, e mexa tudo. Corte a manteiga em cubos e vá juntando à mistura pouco a pouco até esta ficar um pouco granulada.
Adicione o leite e o ovo e continue a mexer até a massa ficar bem homogénea, altura em que deve juntar as passas e mexer mais um pouco.

Coloque farinha numa superfície plana e estenda a massa até esta ficar com cerca de 1cm de espessura. De seguida, corte a massa em discos com a ajuda de um copo e leve ao forno por 10 min.

Preheat the oven at 200ºC. Make tea and soak the raisins for one hour, after which you should take them out and let them dry. Sift the flour onto a bowl and add the sugar, the baking powder and a pinch of salt, and mix everything. Cut the butter into cubes and add them to the mix little by little, until it gets a bit grainy.
Add in the milk and the egg and keep mixing until the dough is homogeneous, at which time you should add the raisins and mix a bit more.

Place some flour onto a working surface and roll out the dough until it is 1cm thick. After that cut the dough in smal discs with the help of a glass and put it in the oven for 10 min.


Parece perfeito? Infelizmente não é. A massa fica sempre demasiado líquida para sequer se pensar em amassá-la e, ao resolver colocar bocados de massa directamente no tabuleiro, acabei por ter scones esborrachados, cozidos por fora e mal cozidos por dentro.
Hoje, ao fazer a receita pela terceira vez (adicionando compota de amoras silvestres em vez de passas) e depois de diminuir a quantidade de leite, a massa continuava demasiado líquida, portanto lembrei-me de despejar pequenas quantidades de massa em formas de muffins. Não estão perfeitos, mas ficaram largamente melhores que os seus antecessores.

A minha questão é: qual é o problema em tudo isto? Demasiado leite ou pouca farinha? Numa próxima vez irei aumentar a quantidade de farinha de 240 gr. para 340 gr. e nessa altura partilharei o resultado.

Sounds perfect? Unfortunately it isn't. The dough is always too liquid to even consider kneading and, when I decided to place bits of dough directly in the tray, I ended up with squashed scones, cooked on the outside and under-cooked on the inside.
Today, after making the recipe for the third time (adding blackberry jam instead of raisins) and reducing the amount of milk, the dough was still too liquide, so I remenbered to pour small amounts of dough in muffin tins. They aren't perfect, but are far better than their predecessors.

So my question is: what is the problem? Too much milk or too little flour? Next time I will increse the amount of flour from 240 gr. to 340 gr. and then I'll share the outcome.
