Lemon & coconut muffins

Verão e fazer uso do forno são duas coisas que, pelos menos em minha casa, são muito pouco compatíveis. Por isso, tenho tentado escolher receitas simples e rápidas, que me façam passar o menos tempo possível dentro da cozinha e envolvam muito pouco esforço braçal.

Numa dessas ocasiões, resolvi adaptar uns muffins da Nigella Lawson ao que eu tinha na despensa: amêndoas raladas passaram a coco ralado, laranjas passaram a limões, leite normal passou a leite de soja. Isto podia transformar-se num autêntico desastre, mas não transformou!

Summer and using the oven are two things that, at least in my house, haven't much in common. So I've been trying to choose simple and quick recipes that make me spend the less possible time inside the kitchen and don't involve a lot of arm exercise.

On one of those occasions, I decided to adapte a muffin recipe from Nigella Lawson to what I had in my pantry: grated almonds became grated coconut, oranges gave place to lemons, and soy milk substituted normal milk. This could possibly become a disaster, but it didn't!

 

  • 75 gr. manteiga sem sal (unsalted butter)
  • 250 gr. farinha com fermento (self-raising flour)
  • 25 gr. coco ralado (grated coconut)
  • 1/2 colher chá bicarbonato de sódio (teaspoon sodium bicarbonate)
  • 1 colher chá fermento em pó (teaspoon baking powder)
  • 75 gr. açúcar (sugar)
  • raspa de um limão (zest of one lemon)
  • 100 ml sumo de limão natural (lemon juice, fresh)
  • 100 ml leite de soja (soy milk)
  • 2 ovos (eggs)
Pré-aqueça o forno a 200ºC. Derreta a manteiga e reserve. Misture a farinha, o coco ralado, o bicarbonato, o fermento em pó, o açúcar e a raspa de limão numa taça grande. Noutra taça, misture o sumo de limão e o leite, e junte depois os ovos e a manteiga derretida (já fria).

De seguida, misture os ingredientes líquidos com os sólidos e vá mexendo tudo com um garfo. A massa deve ficar grumosa e os ingredientes o menos misturados possível.

Coloque os invólucros de papel nas formas de queque, tire a massa para cada um deles e leve ao forno por 20 min. Serve cerca de 12 queques.

Preheat the oven at 200ºC. Melt the butter and reserve. Mix the flour, grated coconut, bicarbonate, baking powder, sugar and lemon zest into a big bowl. In another bowl, mix in the lemon juice and the milk, and then add the eggs and the melted butter (now cooled).

Next, combine the liquid ingredients with the solid ones and mix everything with a fork. The mixture should be lumpy and not so homogeneous.

Place the paper cups on the muffin tin, pour in the mixture and put it in the oven for 20 min. Serves about 12 muffins.

Inspiration Thursday

Adoro saladas. São frescas, leves, nada complicadas e podem ser ultra saborosas. É a comida sem pecado, sem cobranças, sem culpa.

I love saladas. They're fresh, light, uncomplicated and can be very tasty. It's food without sin, without compromises, without guilt.

Real food

Na casa da minha avó materna a comida sabe a comida. É como viver num mercado biológico que nunca fecha, que cheira a terra e a hortelã, que sabe a laranjas e a limonada fresca.

In my grandmother's house food tastes like food. It's like living in a farmer's market that never closes, that smells like earth and mint, that tastes like oranges and fresh lemonade.

Inspiration Thursday

Com o regresso da actividade ao blogue, regressa também o Inspiration Thursday e, com ele, o meu desejo modesto de que as minhas escolhas vos inspirem de alguma maneira!

Acho que fotografar comida tem muito que se lhe diga e, para mim, que preciso apenas de luz natural para tirar umas fotos bem básicas, uma boa imagem vale por mil palavras. Ao folhear revistas e livros de culinária, sou imediatamente atraída pelo seu grafismo e styling e, quanto mais simples, luminosa e despretensiosa for a imagem, melhor.

Quando vi as fotos de Alexander van Berge, encontrei tudo isso, e até mais.

With the return of this blog's activity, so does Inspiration Thursday comes back and, with it, my modest wish that my choices inspire you in some way!

I think that photographing food is quite special and, to me - that only need natural light to take some pretty basic photos - , a good image is worth a thousand words. As I go through culinary magazines and books I'm instantly attracted by its design and styling. The more simple, bright and unpretentious the image is, the better.

So when I saw Alexander van Berge's photos I found all that, and more.

Gateau aux Carrottes

  

  • 250 gr. cenouras (carrots)
  • 2 ovos (eggs)
  • 100 gr. açúcar (sugar)
  • 50 gr. farinha (flour)
  • 10 gr. fermento em pó (baking powder) 
  • 60 gr. nozes em pó (ground walnuts)
  • 70 gr. amêndoas em pó (ground almonds)
  • 2,5 cl óleo (oil)
  • pitada de sal (pinch of salt)
Pré-aqueça o forno a 180ºC. Barre uma forma com manteiga, ou margarina.

Lave, descasque e raspe as cenouras. Numa taça, mexa os ovos e o açúcar. Numa outra taça, coloque a farinha, o fermento e as nozes e amêndas em pó já peneiradas, e, de seguida, junte os ovos pouco a pouco, nunca deixando de mexer. Depois adicione o óleo, o sal e as cenouras, mexendo bem a mistura até que fique homogénea. Despeje a mistura na forma e leve ao forno por 40 min.

Preheat the oven at 180ºC. Brush a tin with butter or margerine.

Wash, peel and grate the carrots. In a bowl, stir in the eggs and sugar. In another bowl, sift in the flour, baking powder and the groung walnuts and almonds. Then add the eggs, little by little, and never stop mixing the ingredients. Next, add the oil, a pinch of salt and the carrots. Mix everything well together. Pour the mixture in the tin and put it in the oven for 40 min.

Quatre-quarts au chocolat

Para mim, nada é tão gratificante como um simples e muito bom bolo de chocolate, com o sabor punjente e levemente amargo do cacau. Conforta-me, abstrai-me e deixa-me terrivelmente bem-disposta!

To me, nothing is as gratifying as a simple and very good chocolate cake, with the rich and slightly bitter flavour of the cocoa. It comforts me and leaves me in a terribly good mood!

  

  • 250 gr. manteiga sem sal amolecida (softened unsalted butter) 
  • 250 gr. açúcar (sugar)
  • 5 ovos (eggs)
  • 200 gr. farinha (flour)  
  • 1 colher café fermento em pó (baking powder)
  • 50 gr. cacau em pó sem açúcar (cocoa powder, unsweetened)
Pré-aqueça o forno a 180ºC. Barre e enfarinhe uma forma de 25 x 8 cm (tipo bolo inglês).

Numa taça, mexa a manteiga até esta adquirir uma consistência cremosa, juntando, de seguida, o açúcar. Mexa bem até a mistura fique mais clara e tipo mousse. Adicione os ovos, um a um, e mexa bem. De seguida, junte a farinha, o fermento e o cacau peneirados.

Encha três quartos da forma com a mistura e leve-a ao forno por 45 min. É delicioso!

Dica: Para quem, como eu, prefere bolos com pouco açúcar, pode perfeitamente reduzir a sua quantidade para 200 gr. sem que isso altere muito o seu sabor. Pelo contrário, realça mais o sabor do cacau.

Preheat the oven at 180ºC. Brush and flour a 25 x 8 cm tin.

In a bowl, stir the butter until it becames more creamy and then add the sugar. Mix it well together until the mixture gets lighter and has a mousse consistency. After that, add in the eggs, one by one, and mix it well. Then, add the flour, baking powder and cocoa already sifted.

Fill in three quarters of the tin with the mixture and put it in the oven for 45 min. It's delicious!

Tip: For those who, like me, prefer cakes with less sugar, you can reduce it's quantity to 200 gr. and it won't affect the flavour. It will actually enhance the flavour of the cocoa.

Back!

   

Eu tenho a irritante tendência para deixar projectos a meio. Começo muito bem, ultra motivada e, por qualquer motivo insignificante, não continuo aquilo que comecei. Desta vez, estou determinada a não deixar que tal aconteça de novo. Assim, depois de muito tempo de ausência, declaro este blogue outra vez no activo!

I have the most annoying tendency to leave projects half way through. I start off really well, ultra motivated and, for some insignificant reason, I don't continue what I've started. This time, I'm determined not to let such thing happen again. So, after a long time of absence, I declare this blog open for business again!

Tarte à l'orange

Estou a sentir falta dos sabores de Verão. Peixe fresco assado na brasa, limonada com hortelã, tomate com oregãos, e laranjas, o sabor punjente das laranjas. Lembram-me dias longos e conversas à beira-mar, refeições no quintal e sestas com janelas abertas. Por tudo isto decidi fazer uma tarte de laranja, que só sabe a laranja e a nada mais do que... laranja.

I'm missing Summer flavours. Grilled fresh fish, lemonade with mint, tomatoes with oregano, and orange, the rich flavour of oranges. They remind me of long days and conversations at the seaside, backyard meals and naps with open windows. Because of all that I decided to make an orange pie that only tastes like orange and nothing more than... orange. 

Primeiro, faça a massa ou a pâte sucrée (esta receita totaliza 500 gr.).
First, make the pastry or pâte sucrée (this recipe makes about 500 gr.).
  • 210 gr. farinha (all purpose flour)
  • 85 gr. açúcar em pó (icing sugar)
  • 1 ovo (egg)
  • 1/2 vagem de baunilha (vanilla pod)
  • 125 gr. manteiga amolecida (softened butter)
  • 25 gr. amêndoas em pó (ground almonds)
  • 1 clhr. café de sal fino (coffeespoon salt)
Peneire a farinha e o açúcar separadamente. Abra uma vagem de baunilha ao meio e use apenas as sementes de uma metade. Corte a manteiga em cubos, coloque-os numa taça e mexa levemente para ficar mais cremosa. De seguida, adicione o açúcar, a amêndoa em pó, o sal, as sementes de baunilha, o ovo e a farinha, mexendo bem sempre que cada ingrediente for adicionado para que fique bem incorporado. Forme uma bola com a massa, envolva-a com película aderente e coloque-a no frigorífico durante duas horas. Nota: se não tiver a vagem de baunilha pode substituí-la por uma colher de chá de extracto de baunilha.

Sift the flour and the sugar separately. Open a vanilla pod in two and use the seeds from one half. Cut the butter into small cubs, place them in a bowl and stirr it lightly just to make it more creamy. After that, add the sugar, the ground almonds, the salt, the vanilla seeds, the egg and the flour, and mix the ingredients well everytime you add one. Once every ingredient is well incorporated, make a ball out of the pastry, wrap it in cling film and place it in the fridge for two hours. Note: if you haven't got a vanilla pod you can replace it with one teaspoon of vanilla extract.


  • 250 gr. massa (pastry)
  • 3 laranjas (oranges)
  • 3 ovos (eggs)
  • 100 gr. açúcar (sugar)
  • 80 gr. manteiga derretida (melted butter)
Pré-aqueça o forno a 190ºC e barre uma tarteira com manteiga ou margarina. Estenda a massa até ficar com cerca de 3 mm de grossura e coloque-a na tarteira. Pique o fundo com um garfo, cubra-o com um disco de papel vegetal e feijões secos. Baixe a temperatura do forno para 180ºC e coloque a massa no forno por 20 min.

Raspe as três laranjas e tire-lhes o sumo. Numa taça, mexa os ovos, o açúcar, a manteiga, o sumo e a raspa das laranjas, e mexa bem todos os ingredientes.

Tire a massa do forno (retire o papel vegetal e os feijões secos) e despeje a mistura. Leve ao forno de novo por 15 min.

Preheat the oven at 190ºC e brush a tin with butter or margerine. Roll out the pastry until it is about 3 mm thick and line it onto the tin. Pick the bottom of the pastry with a fork, cover it with a disc of parchment paper and dried beans. Lower the oven temperature for 180ºC and place the tin in the oven for 20 min.

Take the juice and the zest off the oranges. In a bowl, mix in the eggs, the sugar, the butter, the juice and the orange zest.

Take the tin off the oven (remove the parchment paper and the dried beans) and pour in the mixture. Place it in the oven for 15 min.
