Marbré au chocolat | Marble cake


Ainda mal consigo acreditar que já passou tanto tempo desde o último post aqui publicado! Mas a vontade de fazer coisas doces perdura. Olá de novo!

I can hardly believe in how much time has passed since I published the last post! But the desire of making sweet things still endures. Hello again!


  • 250 gr. manteiga amolecida (butter, softened)
  • 260 gr. açúcar em pó (icing sugar)
  • 6 ovos (eggs)
  • 5 cl rum ou outra bebida (rum or other drink)
  • 300 gr. farinha (flour)
  • 2 clhr. café de fermento em pó (coffee spoon baking powder)
  • 25 gr. cacau em pó (cocoa powder)
  • 4 cl leite (milk)
Pré-aqueça o forno a 180ºC. Barre e enfarinhe uma forma de 28 x 10 cm (tipo bolo inglês).

Numa taça, misture a manteiga amolecida com o açúcar em pó até obter uma consistência bem cremosa. Junte os ovos, um a um, mexendo bem entre eles. A seguir acrescente o rum ou, como no meu caso, tequilla (pode usar qualquer bebida deste tipo), a farinha e o fermento, peneirados.

Divida a mistura em duas partes iguais. Misture o cacau com o leite e incorpore-o, progressivamente, numa das misturas. De seguida, encha a forma alternadamente com a mistura "natural" e a de chocolate. Leve ao forno por cerca de 50 min e já está!

Preheat the oven at 180ºC. Grease and flour a 28 x 10 cm tin.

In a bowl, combine the softened butter with the icing sugar until it gets very creamy. Add in the eggs, one by one, mixing well in between. Next, add the rum or, like me, tequilla (or any drink like this), the flour and baking powder, sifted.

Divide the mixture in two equal parts. Mix the cocoa powder with the milk and add it, gradually, in one of the parts. Next, fill the tin, alternatively, with the natural mixture and the chocolate one. Put it in the oven for about 50 min. and that's it!

Red Velvet Cupcakes


  • 300 gr. farinha (flour)
  • 1 clhr chá sal (teaspoon salt)
  • 1 clhr chá fermento (teaspoon baking powder)
  • 2 clhr sopa cacau em pó (tablespoons cocoa powder)
  • 20 gr. corante vermelho (red food coloring)
  • 300 gr. açúcar (white sugar)
  • 120 gr. manteiga amolecida (softened butter)
  • 2 ovos (eggs)
  • 1 clhr chá baunilha (teaspoon vanilla extract)
  • 240 ml buttermilk ou adicione 1 clhr chá vinagre a 240 ml leite e deixe estar por 10 min. (buttermilk or add 1 teaspoon vinager to 240 ml milk and leave for 10 min.)
  • MAIS 1 clhr chá fermento e 1 clhr chá vinagre (PLUS 1 teaspoon baking powder and 1 teaspoon vinager) 
Pré-aqueça o forno a 180ºC. Coloque as formas de papel num tabuleiro para cupcakes/muffins (esta receita faz cerca de 24 cupcakes).

Numa taça, misture a farinha, o sal e o fermento. Numa outra taça, junte o cacau ao corante até formar uma pasta. Numa taça grande, bata a manteiga com o açúcar e a baunilha, e adicione os ovos um a um. De seguida, junte a pasta do corante e misture bem (é nesta altura que a cor vermelha do corante se vai notar). Depois, adicione alternadamente, metade da farinha e do buttermilk até ficar tudo muito bem misturado. À parte, misture o fermento com o vinagre e junte à mistura. Espalhe a massa pelas formas e leve ao forno por cerca de 20 minutos.

Para a cobertura, pode usar esta ou esta receita (nesta basta retirar o cacau). Eu usei a primeira, mas recomendo as duas!

Dica: Ao fazer a receita reparei que a mistura do cacau com o corante é um pouco difícil, pois o corante não se dissolve com facilidade. A minha dica é juntem só um bocadinho de leite, uma vez que ajuda bastante a que tudo se misture melhor.

Preheat the oven at 180ºC. Place the paper cups on a muffin tin (makes about 24 cupcakes).

In a bowl, mix in the flour, salt and baking powder. In another smaller bowl, mix the cocoa powder with the food coloring until it turns into a paste. In a big bowl, beat the butter with the sugar and vanilla extract, and add the eggs one by one. Then add the coloring paste and mix well (it's at this point that you'll notice the red colour). After that, add, alternately, half of the flour and the buttermilk and so on until everything is well mixed. On the side, mix the baking powder with the vinager and add it to the mix. Spred the mixture through the tin and place it in the oven for about 20 minutes.

For the icing you can use this or this recipe (to do this one you just take off the cocoa powder). I used the first, but recommend them both!

Tip: As I was making the recipe, I realized that it is a bit difficult to mix the cocoa powder with the food coloring, because the coloring doesn't dissolve easily. My tip is to add just a tiny bit of milk, because it really helps to mix everything better.

Bom ano! | Happy new year!


Para mim o ano novo não é encarado com grandes euforias. Não é o meu feitio. Gosto de sentir que há 365 dias ainda por escrever, mas não perco tempo a pensar que esse será o ano em que cumprirei todas as metas, todos os objectivos, todos os projectos. Sou do tipo mais simples.

Apreciem-no. E todos os dias, mais um bocadinho. Bom ano 2011!

I don't face a new year with lots and lots of excitement. It's not my thing. I like to feel that there are 365 days still unwritten, but I don't loose my time thinking that that will be the year where I'll fulfill all of my goals and projects. I'm more of the simple type.

Enjoy it. And a little bit more, everyday. Happy 2011!

Feliz Natal! | Merry Christmas!


Estou de partida para passar o Natal fora, por isso, aqui deixo uma mensagem rápida de boas festas! Espero que tenham uma óptima noite, com uma mesa cheia de delícias e, principalmente, muitos risos. E lembrem-se, o Natal é para comer sem culpa! Até pr'a semana!

Weekend bliss, part II


Lembram-se desta receita de cupcakes? Pois bem, a base é exactamente a mesma, mas, desta vez, apeteceu-me fazer um creme diferente e, claro, chocolate estava na ordem do dia.

Remember this cupcakes recipe? Well, the cake recipe is the same but, this time, I wanted to make a different icing and, of course, chocolate was in order.
  • 150 gr. manteiga sem sal (unsalted butter)
  • 250 gr. açúcar em pó (icing sugar)
  • 2 clhr. sopa cacau em pó (tbls cocoa powder)
  • 2 clhr. sopa água muito quente (tbls very hot water)
Dissolva o cacau na água. De seguida, misture todos os ingredientes até ficar bem cremosa. Coloque a mistura num saco de pasteleiro e comece a decorar!

Mix the water and the cocoa powder. Then, beat all of the ingredients until the mixture is smooth and creamy. Place the icing in a pastry bag and start piping!

Weekend bliss, part I

  • 115 gr. manteiga (butter)
  • 115 gr. chocolate negro (dark chocolate)
  • 200 gr. açúcar (caster sugar)
  • pitada de sal (pinch of salt)
  • 1 clhr. chá extracto baunilha (tsp vanilla extract)
  • 140 gr. farinha sem fermento (plain flour)
  • 2 clhr. sopa cacau em pó (tbsp cocoa powder)
  • 100 gr. nozes (chopped walnuts)
Pré-aqueça o forno a 180ºC. Barre e enfarinhe uma forma quadrada com manteiga ou margarina.

Derreta a manteiga e o chocolate em banho-maria, e mexa até ficar cremoso. Deixe arrefecer ligeiramente e, de seguida, adicione o açúcar, o sal e a baunilha. Junte os ovos, um a um, e mexa até que estejam bem incorporados. Peneire a farinha e o cacau em pó para a mistura e mexa bem. Depois adicione as nozes cortadas, mexa e coloque a mistura na forma.

Leve ao forno por 35-40 minutos ou controle a cozedura inserindo um palito na massa. Logo que ele saia quase limpo desligue o forno. Deixe arrefecer e polvilhe açúcar em pó.

Preheat the oven to 180ºC. Grease and line the base of a square baking tin.

Melt the butter and chocolate in a bowl set over a saucepan of gently simmering water. Stir until smooth. Leave to cool slightly and stir in the sugar, salt and vanilla extract. Add the eggs, one at a time, and beat until well blended. Sift the flour and cocoa powder into the mixture and beat until smooth. Then add the chopped walnuts, stir and pour the mixture into the tin.

Place it in the oven for 35-40 minutes or until a skewer inserted into the centre comes out almost clean. Leave to cool and sprinkle it with icing sugar.

Birthday cupcakes


Estes são uns cupcakes com um sabor especial. Primeiro, porque foi a primeira vez que os fiz. Segundo, porque os fiz no dia do meu aniversário. E terceiro, porque sairam bem! Caso contrário, não estariamos a ter esta conversa.

These cupcakes are special. First, because it was the first time I made some. Second, because I made them on my birthday. And third, because they were very good! Otherwise, we wouldn't be having this conversation.


Para a massa (for the cupcake)
  • 150 gr. manteiga amolecida (softened butter)
  • 150 gr. açúcar (castor sugar)
  • 175 gr. farinha com fermento (self-raising flour)
  • 3 ovos (eggs)
  • 2 colheres sopa cacau em pó (tablespoons cocoa powder)
  • 1 colher chá extracto baunilha (teaspoon vanilla extract)
Para o creme (for the frosting)
  • 200 gr. creme de queijo (cream cheese)
  • 60 gr. manteiga amolecida (softened butter)
  • 125 gr. açúcar em pó (icing sugar)
  • 1 colher chá extracto baunilha (teaspoon vanilla extract)
  • pitada de sal (pinch of salt)
Pré-aqueça o forno a 180ºC. Coloque as formas de papel num tabuleiro para cupcakes/muffins. 

Parta os ovos para uma taça e mexa-os com um garfo. Junte todos os ingredientes numa taça grande e misture-os com uma batedeira durante cerca de 2 min., até que se forme uma mistura leve e cremosa. Espalhe a massa pelas formas e leve ao forno por 18-20 minutos. Depois de arrefecidos, os cupcakes estão prontos para levarem o creme por cima.

De seguida, é só enfeitar! Eu recorri às raspas de chocolate negro, e recomendo.

Crack the eggs into a cup and beat lightly with a fork. Place all the ingredients in a large bowl and mix them with an electric mixer for 2 min., until it's light and creamy. Spread the mixture thought the tin and place it in the oven for 18-20 min. After they're cool, the cupcakes are ready to be frosted.

After that, go for the embelhisments! I grated dark chocolate, and I recommend it.

Bruschetta? Crostini?


Gosto de comida simples e eficiente. É quase um slogan na minha vida diária. E quando não estou com paciência para esperar muito tempo por um prato que me deixe gloriosamente saciada, recorro a esta solução: bruschetta. Ou será antes crostini? Depois de ter lido as respectivas definições e espreitado algumas receitas, percebi que aquilo que eu tanto gosto de fazer não é totalmente uma coisa nem outra. Talvez esteja na categoria pseudo. Qualquer que seja a categoria, o resultado é bom. Muito bom.

Primeiro, coloco uma frigideira com um pouco de azeite em lume brando. Depois tosto algumas fatias de pão nesse azeite só até ficar crocante e dourado. Retiro o pão e salteio na mesma frigideira os ingredientes que quiser pôr por cima. Na primeira imagem, temos cogumelos portobello, azeitonas, tomate seco e salsa; e na segunda imagem, temos tomate cereja, alho françês e salsa.

I like simple and efficient food. This is almost the slogan for my daily life. And when I'm not in the mood to wait too much for something that leaves me gloriously satisfied, I go for this solution: bruschetta. Or is it crostini? After reading their descriptions and peeking at some recipes, I discovered that this is not 100% one or the other. Maybe it falls in the pseudo category. Whatever category it is, the result is good. Really good.

First, I put a bit of olive oil in a pan and put it in low heat. Then I toast a couple slices of bread in that oil until they're crunchy and golden. I take the bread out and sauté the ingredients I want to put on top of the bread. On the first image, we have portobello mushrooms, olives, dried tomatoes and parsley; on the second image, we have cherry tomatoes, french garlic and parsley.

Delicious!
