Say couscous!

E pronto! Fácil, rápido e maravilhoso. Quem disse que o couscous é desinteressante?

I like the word couscous. It has rithm and sounds good. It's a word that dances. What it refers to, on the contrary, can look a bit uninteresting. But, once it is cooked, it can be so tasty! My favourite way of eating couscous is with sauteed vegetables. No meat. No fish. It's a dish rich in flavour, light and it is great for the hot weather.

The first step is to cook the couscous and, in this point, my reference measure for one person is a teacup. So, in a bowl, you place a teacup of couscous and add the same amount of very hot water (not boiling). Then, cover the bowl and, when the water is completely absorbed, that means the couscous is ready. Now let's take care of the vegetables. I used carrots, green beans and zucchini, all sliced like sticks, and sauteed them separately in a bit of olive oil. You don't need much more.

When the vegetables are all ready, just put the couscous in the pan you already used to sautee the vegetables, mixing it up a bit just to make it looser and give it some colour.

Next up, mix eveything in a bowl and season it with salt and lemon juice. I also added one chopped tomatoe to give it more freshness. And that's it! Easy, quick and wonderful. Who said couscous is uninteresting?
