Inspiration Thursday

Pode haver alguém por aí que não goste de cupcakes, mas parece inegável que, mesmo que não se goste do seu sabor, tem de se gostar do seu aspecto! São fotogénicos e são muito sedutores!

There may me someone out there that doesn't like cupcakes, but it seems undeniable that, even without liking its flavour, you have to like its looks! They are photogenic and sooo seductive!

Scones - Two days later

Não sou pessoa de me irritar quando as coisas correm mal, mas quando correm terrivelmente mal e eu só me tenho a mim como principal responsável, aí sim, irrito-me. E muito.

Fiz esta receita pela primeira vez no domingo, tendo em conta de que me manteria dentro do prazo que estabeleci para mim mesma - fazer uma receita deste livro uma vez por semana. O resultado não podia ter sido pior e passei o resto do dia a rever todas as minhas acções na cozinha e a compará-las com o que estava indicado na receita. Infelizmente, não tinha feito nada de errado. Digo infelizmente, pois quando sabemos que cometemos um erro podemos remediá-lo e tudo volta ao normal.

I'm not a person to get irritated when things go wrong, but when they go terribly wrong and I'm the only one responsible for that, that's when I get irritated. A lot.

I made this recipe for the first time on Sunday, keeping in mind that I would stay in time for the challenge I've set for myself - make a recipe from this book once a week. The result couldn't have been worst and I spent the rest of the day reviewing my actions in the kitchen and matching them with the recipe. Unfortunately, I hadn't make anything wrong. I say unfortunately because when we realize we made a mistake there's always a chance to fix it and go back to normal.

      
Aqui está a receita original (here is the original recipe):

  • tigela de chá (bowl of tea)
  • 120 gr. de passas (raisins)
  • 240 gr. de farinha (all purpose flour)
  • pitada de sal (pinch of salt)
  • 90 gr. de açúcar (caster sugar)
  • 10 gr. de fermento (baking powder)
  • 100 gr. de manteiga (unsalted butter)
  • 20 cl. de leite (milk)
  • 1 ovo (egg)
Pré-aqueça o forno a 200ºC. Prepare o chá e coloque as passas de molho durante uma hora, após a qual as deve retirar e secar. Peneire a farinha para uma tigela e adicione o açúcar, o fermento e uma pitada de sal, e mexa tudo. Corte a manteiga em cubos e vá juntando à mistura pouco a pouco até esta ficar um pouco granulada.
Adicione o leite e o ovo e continue a mexer até a massa ficar bem homogénea, altura em que deve juntar as passas e mexer mais um pouco.

Coloque farinha numa superfície plana e estenda a massa até esta ficar com cerca de 1cm de espessura. De seguida, corte a massa em discos com a ajuda de um copo e leve ao forno por 10 min.

Preheat the oven at 200ºC. Make tea and soak the raisins for one hour, after which you should take them out and let them dry. Sift the flour onto a bowl and add the sugar, the baking powder and a pinch of salt, and mix everything. Cut the butter into cubes and add them to the mix little by little, until it gets a bit grainy.
Add in the milk and the egg and keep mixing until the dough is homogeneous, at which time you should add the raisins and mix a bit more.

Place some flour onto a working surface and roll out the dough until it is 1cm thick. After that cut the dough in smal discs with the help of a glass and put it in the oven for 10 min.


Parece perfeito? Infelizmente não é. A massa fica sempre demasiado líquida para sequer se pensar em amassá-la e, ao resolver colocar bocados de massa directamente no tabuleiro, acabei por ter scones esborrachados, cozidos por fora e mal cozidos por dentro.
Hoje, ao fazer a receita pela terceira vez (adicionando compota de amoras silvestres em vez de passas) e depois de diminuir a quantidade de leite, a massa continuava demasiado líquida, portanto lembrei-me de despejar pequenas quantidades de massa em formas de muffins. Não estão perfeitos, mas ficaram largamente melhores que os seus antecessores.

A minha questão é: qual é o problema em tudo isto? Demasiado leite ou pouca farinha? Numa próxima vez irei aumentar a quantidade de farinha de 240 gr. para 340 gr. e nessa altura partilharei o resultado.

Sounds perfect? Unfortunately it isn't. The dough is always too liquid to even consider kneading and, when I decided to place bits of dough directly in the tray, I ended up with squashed scones, cooked on the outside and under-cooked on the inside.
Today, after making the recipe for the third time (adding blackberry jam instead of raisins) and reducing the amount of milk, the dough was still too liquide, so I remenbered to pour small amounts of dough in muffin tins. They aren't perfect, but are far better than their predecessors.

So my question is: what is the problem? Too much milk or too little flour? Next time I will increse the amount of flour from 240 gr. to 340 gr. and then I'll share the outcome.

Inspiration Thursday

Panquecas... Deixem-me tirar um momento para me babar e voltar a falar sobre elas já restabelecida. Já está! É interessante que goste tanto de panquecas, tanto pelo sabor como pelo aspecto, e seja tão raro comê-las. De facto, no período em que mais as comi acabei por descobrir, da pior maneira, que o meu estômago não as tolera muito bem. Mas olhar não faz mal a ninguém!

Pancakes... Let me take a moment to drool and I'll be back fully restored. Done! It's interesting that I like pancakes so much - for their flavour as well as looks - and it is so rare for me to eat them. In fact, when I ate them the most I discovered the hard way that my stomach doesn't tolerate them very well. But looking never hurt anyone!

Pan di Spagna

Hoje não está a ser um dia muito produtivo para mim. Além do tempo antipático que faz lá fora e que eu continuo a sentir mesmo tendo um aquecedor ligado quase em cima de mim e um cobertor enrolado no corpo, sinto-me constipada, ou melhor, quase constipada. Ainda estou a passar pela fase entediante que precede uma qualquer constipação. Estou quase lá e sinto-me mal, mas ainda não completei a viagem. Vocês percebem o que eu quero dizer.

Estando finalmente livre desta encomenda que me sugou a semana, a última coisa de que precisava era de fazer uma receita do Larousse des Desserts com dores de cabeça e o nariz a pingar, mas lá o fiz e posso dizer que não foi uma tortura.

Today wasn't a very productive day for me. In addition to the unpleasant weather outside that I still feel inside even after having a heater practically glued to my body and a blanket wrapped around me, I feel I have a cold. It's like I'm almost there and feel sick, but I haven't completed the journey. You know what I mean.

I was finally free from this order that sucked all of my week, so the last thing I wanted was to make a recipe from Larousse des Desserts with a headache and a runny nose, but I did it and I can say it wasn't a torture. 
   

  • 125 gr. de farinha (all purpose flour)
  • 1 limão (lemon)
  • 4 ovos (eggs)
  • pitada de sal (pinch of salt)
  • 125 gr. de açúcar (caster sugar)
Pré-aqueça o forno a 180ºC e coloque uma panela com água ao lume até começar a ferver. Numa taça coloque os ovos, o açúcar e uma pitada de sal e misture tudo. Coloque a taça por cima da panela e vá mexendo a mistura vigorosamente até que a mesma aumente de volume (cerca do dobro). Logo que isso aconteça retire a taça do calor e continue a mexer a mistura até que a mesma arrefeça um pouco.

De seguida, adicione a farinha peneirada e a raspa de um limão e mexa até os ingredientes ficarem bem incorporados. Barre uma forma pequena com manteiga e despeje a massa. Leve ao forno por 20 ou 25 min.

Preheat the oven at 180ºC and place a pan with water in the heat until it starts to boil. In a bowl place the eggs, the sugar and a pinch of salt and mix. Place the bowl on top of the pan and mix it vigorously until it increases volume (double or so). As soon as that happens take the bowl of the heat and continue to beat the mixture until it cools off.

Then, add the sifted flour and the zest of a lemon, and mix everything until the ingredients are well incorporated. Brush a small tin with butter and pour in the mixture. Put it in the oven for 20 or 25 min.

Inspiration Thursday

Eu podia comer sushi todos os dias. E antes que alguém comece a rolar os olhos, eu sei que muito provavelmente ficaria enjoada, mas deixem-me viver pensando nesta possibilidade. Não só acho que sabe maravilhosamente bem - quando bem feito, claro -, como também é ultra fotogénico. Ora vejam.

I could eat sushi everyday. And before someone starts rolling their eyes, I know I would probably be sick after a while, but let me live with this possibility in mind. Not only does it taste wonderfully well - when it's well made, of course -, but it's also super photogenic. Take a look.

Churros

O final da semana aproximava-se e ainda não tinha feito nenhuma receita do Larousse des Desserts. Quanto mais folheava o livro, menos me conseguia decidir. E os dias passavam. Ontem à noite, em mais uma incursão literária, encontrei o que me apetecia fazer. Churros, a comida antítese de qualquer dia de chuva e neblina. O ideal anti-depressivo.

The end of the week was coming and I still hadn't make any recipe from Larousse des Desserts. The more I browsed through the book, the less I could make up my mind. And the days passed. Yesterday night, in another literary incursion, I found what I felt like doing. Churros, the antitheses food for any rainy or misty day. The ideal antidepressant.

      
  • 25 cl. de água (water)
  • 60 gr. de manteiga (butter)
  • pitada de sal (pinch of salt)
  • 60 gr. de açúcar (sugar)
  • 225 gr. de farinha (all-purpose flour)
  • 2 ovos (eggs)
  • óleo vegetal (vegetable oil)
Ferva a água com a manteiga, uma pitada de sal e duas pitadas de açúcar, até que fique tudo bem derretido e misturado. Peneire a farinha para uma taça, faça um pequeno buraco no centro da farinha e despeje a água com manteiga. Mexa bem a mistura, até obter uma massa homogénea.

Numa taça à parte, bata os ovos e adicione-os à massa. Mexa tudo até os ingredientes ficarem bem incorporados. Deixe a massa repousar por 1 hora no frigorífico.

Aqueça o óleo numa frigideira. Coloque a massa num saco de pasteleiro nº10 e vá colocando a fritar pequenas tiras de cerca de 10 cm de comprimento, tendo cuidado para que elas não se colem umas às outras. Logo que estiverem douradas, retire da frigideira e coloque-as em papel absorvente para retirar o excesso de óleo. Quando todas as tiras estiverem fritas e livres do excesso de óleo, passe-as por açúcar e estão prontas a servir.

Boil the water with the butter, a pinch of salt and two pinches of sugar until everything is melted and mixed. Sift the flour into a bowl, make a hole in the center of the flour and pour in the water with the butter. Beat the mixture well, until it turns into an homogeneus dough.

In another bowl, beat the eggs and add them to the dough. Mix everything and put the dough in the fridge for 1 hour.

Heat the oil in a frying pan. Put the dough in a pastry bag nr.10 and place little bands (about 10 cm long) in the pan. Be careful so that the bands don't glue. When then turn golden, take them out of the pan and place them onto absorbent paper to take off the excess oil. When all the bands are fried and less oily, pass them through sugar and they are ready to serve.

Todos nós conhecemos de perto aqueles dias em que não estamos propriamente bem-dispostos nem totalmente mal-humorados. São dias em que caminhamos numa área cinzenta, em que só estamos bem onde não estamos e só queremos ir onde não vamos. São esses os dias em que apenas ao fazer aquilo que nós dá prazer genuíno conseguimos voltar lentamente a encontrar o nosso equilíbrio.

Ontem foi um desses dias para mim, e só um final de tarde passado a inventar uma receita me devolveu o bom-humor habitual. Soube bem.

We are all familiar with those days when we're not exactly happy nor completely moody. We feel like we're walking in a grey area, knowing we could only feel fine by doing just the opposite we do all day. Those are the days where only by doing what brings us genuine pleasure we can slowly find our balance again.

Yesterday was one of those days for me, and the only way I got my good mood back was by spending the evening inventing a recipe and cooking it. It felt nice.

   

Cozinhar por impulso e apenas com alguns ingredientes que tenha disponíveis é para mim a forma mais satisfatória de cozinhar. Não há demoras e tudo se torna mais simples e divertido, que é o que se procura, principalmente num dia em que pouca coisa nos anima.

Pegando no que sobrou da massa usada na tarte de maçã, forrei seis mini tarteiras e depois "polvilhei" o fundo com nozes cortadas à balda (a linguagem técnica usada neste blogue é impressionante). E o que é que pode confortar mais do que chocolate? Nada, na minha opinião. Assim, pus metade de um pacote de natas em lume muito baixo até começar a levantar fervura, adicionando de seguida metade de uma tablete de chocolate meio-amargo e mexendo sempre até derreter. De seguida, juntei uma chávena e meia de café e uma pitada de açúcar em pó, e continuei a mexer até se incorporar bem. Neste ponto, desliguei o lume e deixei arrefecer a mistura por uns minutos. 

Numa taça à parte, bati um ovo que, depois, juntei em três vezes à mistura de chocolate. Convém juntar pouco a pouco para que o ovo fique à temperatura do chocolate e não começe a cozinhar com o calor. Nesta altura foi só despejar o recheio por cima das nozes e levar ao forno por cerca de 30 min. ou até a massa ficar algo dourada. Et voilá, saboroso e infinitamente satisfatório! 

Impulsive cooking with just a few available ingredients is for me the most satisfactory way of cooking. There's not much time waisted and everything is more simple and enjoyable, and that's what we are looking for in a day where practically nothing cheers us up.

I started by using the leftover pastry used in the apple pie and lined it on six tartelette tins, and then sprinkled a few roughly chopped nuts on the bottom. And what can be more comforting than chocolate? For me, nothing. So, I've put half of a pack of sour cream in very low heat and when it started to simmer I added half of a semisweet chocolate tablet and continued stirring until it melted. Then I added a cup of coffee and a pinch of icing sugar and continued stirring until everything blended well together. At this point I turned the heat of and let the mixture cool for a few minutes.

In a bowl I've whisked an egg that I added to the mixture in three times. You really have to do this little by little so that the egg reaches the chocolate temperature and doesn't start cooking with the its heat. By this time, all I had to do was pour the mixture on top of the nuts and put everything in the oven for about 30 min. or until the pastry gets a bit golden. Et voilá! Highly delicious and satisfactory!

Inspiration Thursday

Quase em pé de igualdade com o prazer de saborear uma boa comida está o prazer de saboreá-la num local que nos inspira e nos conforta. Digo quase, pois não poucas vezes damos por nós a comer a melhor iguaria no sítio menos glamoroso de sempre. Mas há sítios que nos deixam de bom-humor ainda antes de fazermos o pedido!

The pleasure of savouring good food is almost hand in hand with the pleasure of savouring it in a place that inspires and comforts us. I say almost, because it's quite often to eat the best delicacy in the least glamorous place of all. But there are places that can put us in a good mood way before we order!
