Chicken pies

O que fazer quando sobra praticamente metade do frango assado take-away, esse amigo fiel que salva qualquer refeição? Há um sem-número de soluções culinárias, mas poucas são tão saborosas e tradicionais como as empadas.

What should we do with the leftovers of almost half of a take-away grilled chicken, that loyal friend that saves any meal? There's a wide range of culinary solutions, but few are so tasty and traditional as pies.

Para a massa (for the dough):

  • 200gr. farinha (all purpose flour)
  • 80gr. manteiga (butter)
  • 5/6 colheres sopa leite (tablespoons milk)
  • 1 ovo (egg)
  • pitada de sal (pinch of salt)

Para o recheio (for the filling):

  • azeite (olive oil)
  • cebola (onion)
  • alho (garlic)
  • frango desfiado (chopped chicken)
  • cenoura ralada (grated carrot)
  • presunto picado (chopped ham)
  • farinha (all purpose flour)
  • leite (milk)

Em primeiro lugar, misture todos os ingredientes necessários para a massa e lentamente comece a amassar até obter uma textura uniforme. De seguida, barre formas próprias para empadas com manteiga e farinha, e estenda a massa em cada uma delas. Deve sempre deixar uma margem de massa por fora da forma. Logo que todas as formas estejam preenchidas, deixe a massa descansar por 45min.

Uma vez que o recheio foi feito a olho, fica à sua escolha a quantidade de recheio que quer fazer. Neste caso, basta fazer um refugado com azeite, cebola e alho, e colocar o frango desfiado, a cenoura ralada e o presunto finamente picado a seguir. Deixe ficar os ingredientes a apurar por alguns minutos, e adicione um pouco de farinha e leite para engrossar o recheio.

Aqueça o forno a 190ºC. Coloque o recheio nas formas (mais ou menos recheio consoante o seu gosto pessoal) e termine a empada colocando uma tampa de massa por cima do recheio. Para selar a empada, basta puxar para dentro a margem de massa que deixou no início da receita. De seguida, basta pincelar o topo da empada com gema de ovo e levar ao forno!

First of, mix all of the necessary ingredients for the dough and gently start molding until you get an even texture. Then, spread butter and flour into the pie molds and unroll the dough in each of them. You should always leave some excess of dough out of the mold margin. When every mold is filled, leave the dough to rest for 45min.

Since my filling wasn't made by following a recipe, it's up to you to decide on the amount of filling you want to make. In this case, and using a pan, just make a simple base with olive oil, chopped onions and garlic, and then add the chopped chicken, the grated carrot and the finely chopped ham. Leave it in the heat for some minutes, enough so that all of the ingredients blend together. Then, add a little bit of flour and milk to thicken the mixture.

Preheat the oven at 190ºC. Place the filling in the molds (more or less accordingly to your own taste) and finish of the pie by placing a dough cover on top of the filling. To seal of the pie, just pull in the dough excess you left in the mold margin. Now you only have to brush the pies with an egg yolk and put it in the oven!
